Just remember: unless you live on the coast and have access to fresh shrimp, it’s best to buy frozen shrimp. The “fresh” shrimp you see in the seafood case at the supermarket are almost always thawed frozen shrimp, and who knows how long they’ve been sitting there. Most shrimp are cleaned and flash-frozen shortly after being caught, so you’re better off buying frozen shrimp and defrosting them yourself. And nowadays, you can buy shrimp already deveined, making recipe prep a breeze!

Made almost entirely from pantry and freezer staples, this dish is one of my go-to meals when I have to hit the kitchen running. You begin by making a quick Greek-spiced tomato sauce on the stovetop. Then you nestle the shrimp in the sauce, top it with chunks of feta, and slide it into the oven to bake.
